I’ve been lactose intolerant for 30 years, well diagnosed at least. i spent most of my life simply avoiding milk. My consumption habits as they related to ice cream, cheese, et al didn’t change that much. After suffering through years of extremely uncomfortable intestinal pain i turned to Lactaid pills and continued with my established eating habits, circa 1997. After several life changing events, one the break up of a long term relationship, and another being the adoption of yoga into my exercise regimen, i embarked on an experiment. I was reading a book by one of my favorite yoga instructors, specifically regarding the ingestion and digestion of dairy. I didn’t take the words of an LA based yoga instructor as gospel by any means, especially regarding diet, but it was enough to get me to cease consuming dairy for a week.
It changed my life, quite literally, and i’m not prone to hyperbole, at least i like to think that i’m not. I noticed a dramatic change in my physical and mental health within that week. So much so that I never ate dairy again. That was February 2005. That was the start. I began dating a vegan mid 2006 which led to experimenting with vegan cuisine. By the end of 2006 I was so rarely eating meat of any kind that i decided to stop altogether. I haven’t missed it at all.
I phased meat out of my diet over a fairly long time period, so I never really felt any great change in my health. Over the summer of 2007 I befriended a raw/vegan chef who has been gracious enough to share some of her recipes and expertise with me. I noticed an immediate and dramatic change in my health with this change in my diet. I’m not as tired or run down as i used to be, i don’t require as much sleep, i have a ‘clear’ head, i handle stress much better, my digestive system is, ummm, i’ll leave that one alone. Basically, i feel much, much better after switching to a primarily raw diet.
This blog is ‘about’ the day to day life of my transformation into a vegan and raw lifestyle, while making my living primarily in the restaurant industry, in Atlanta, Georgia. I like to write about new recipes and experimentations with food, i really like to take pictures of the food i create, review vegan/raw restaurants, stores and farmer’s markets, and any other relevant topics.
